Recipe: Keto Khichdi

Low Carb Keto-Friendly Khichdi

Ingredients

  • 1 cup Grated Cauliflower
  • 1 cup Spinach Pureé
  • 1 medium Tomato diced
  • 1 medium Onion chopped
  • 4 strings French Beans cubed small
  • 1 small Carrot cubed small
  • 1 small Green Chilly chopped fine
  • 2 tbsp Soy Granules
  • 1 tbsp Ginger-Garlic Paste
  • 1 sprig Coriander Leaves finely chopped
  • 2 tbsp Ghee
  • 1 tsp Cumin Seeds
  • 1/2 tsp Asafoetida
  • 1 tsp Salt
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala Powder

Instructions

  1. Grate cauliflower into rice-like texture.

  2. Blanch fresh, cleaned spinach. Pureé and set aside. 

  3. Heat ghee in a wok. Once hot, add cumin seeds (jeera) and allow to crackle.

  4. Add chopped onions and sauté till translucent. Add ginger-garlic paste and chopped green chillies.

  5. Add the powdered masalas and spices, along with the tomato. Sauté while sprinkling a little water from time to time.

  6. Once the mixture caramelises (turns golden-brown in colour), add the remaining veggies, soy granules and grated cauliflower. Sauté for a few minutes.

  7. Add the spinach pureé, and mix thoroughly.

  8. Add a little water to bring the mixture to the required consistency of khichdi, and bring to a boil. Check seasoning and adjust to taste.

  9. Garnish with chopped coriander. Serve hot.

Who said khichdi can’t be keto-friendly, eh? 🙂
